Cinnamomum Verum is also available in different grades and varieties which are further broken down into two main categories, Cinnamomum album, and Cinnamomum zeylanicum. The inner white coating of the Cinnamomum album is the dried out peel of Cinnamomum seeped while Cinnamomum zeylanicum is the white coating of the seeds and stems. The two grades of cinnamon sticks can be used interchangeably with the varying amounts of Cinnamomum album or Cinnamomum zeylanicum to flavor or add extra spice to food.7
